Welcome to the ranking of the best burgers in Bratislava. In the covid year of 2020, several companies started making top notch burgers as a crisis menu.
And since there's no way of telling when covid will end and how many businesses will keep making burgers after the pandemic, I decided to add multiple spots in the ranking to be as nutritious as possible, in case even more burger spots vanish.
If you want a detailed description of the individual burger spots, feel free to dive into the attached Instagram profiles.
11. Krasty Tasty
Krasty Tasty was created by a split from the legendary Burger Bar. Aside from the original joint on Mlynské nivy, there's now a much larger one on the corner of Miletičova and Prievozská street.
The signature burger here is reminiscent of the typical Slovak pub style with a thicker and rather softer patty. Made of leaner meat and a bun on the dense side. In any case, the meat holds its juices perfectly, you'll find a beautiful pink gradient inside after biting in. The ingredients are very high quality and well combined. Krasty Tasty apparently has its barbecue game down to a tee.
10. Estévečka
Again, a well-known name that has been maintaining the high quality deliver. The owner of this company goes for bold combinations with ingredients such as sunny-side-up, herb dressing, arugula or nachos, but you'll also find a basic cheeseburger with a combination of cheddar and gouda. Again, the meat is thick, juicy and delicious. A big surprise and improvement over the past is the local brioche.
9. Hambáč
Hambáč has had a turbulent year, during which it disappeared for a while and then returned in a new "booth" with expanded staff. The burger remained the same and it's still great. We're talking purely Slovak style with a non-brioche crunchy and flakey bun, which breaks all prejudices in the first bite and proves that even the less well-known burger genres can be absolutely stellar.
For several years now, I've been arguing that the quality of Bratislava burgers does not match the size of the capital at all. And the ten-figure ranking is not entirely fair to those that taste above average or at least contributed to the evolution of burgers in Bratislava by presenting this food at some point in the past.
8. Jacob Café
A very controversial burger that I personally love, but I know a few people who are not down with it at all. This one is not grilled, but "cooked" in a sous-vide way, placed on a very sweet bun, so delicate and delicious. I definitely recommend it to people who don't like burgers because they are too "basic" for them. Jacob could be The answer to the question of whether this food could not be made in a more delicious and aristocratic way.
7. Freaks
We're going to Petržalka again. This burger is another one from the "pub" genre, extremely juicy and sweet in tones, which is due to the local cult component - bacon jam. The meat is finely ground, the burger full of sauces, a very pleasant surprise is the brioche, which at first glance looks much more massive than you'll find after biting.
6. Karls
The king of the western part of Bratislava, who has been one of the top spots in Bratislava since its inception. Reminiscent of Roxor in style and appearance, the feeling of total shutdown will be quite familiar to you, but it also has plenty of its own "sauce", which makes it worthwhile to travel all the way to Dlhé diely. I don't focus on fries at all in this ranking, but this is a place where they definitely must be mentioned.
5. Bistronomy
The first of the burgers created due to the fact that someone in China ate bat soup in 2019. The most important thing to know about the burger from Bistronomy is that it was invented by one of today's most talented Chefs in a fine-dining bistro, which immediately skyrocketed all the way to the absolute Slovak top after its creation.
Still, the burger is no experiment, its ingredients are essentially minimalist, all finely chopped, so every single bite tastes exactly the same. The meat is pink inside and the burger is amongst a handful of burgers from Bratislava, where you can taste the right proportion of cheese.
There is no benevolence if the ranking of Bratislava burgers also mentions a few non-Bratislava spots. Especially in the last two years, the Slovak burger scene has risen so much that even outside the capital you'll find places beyond capable of competing with the ones in Bratislava. Several of them would also be able to easily aim for the top in this ranking.
Before we move on to the Top four, I have to complain about the fierce struggle I went through while lining up the last four burgers. I have experienced every single one of them in a way that was, at the given moment, the best burger I had ever eaten in my life.
For weeks, I've been changing these four names at the top - each one of them took the first place for a while - observing the subconscious gusts coming over me. In the end, however, it was time to decide on the final order. I've set aside all of the external expectations and "hype" and went by the way I felt.
4. Mäso od Romana
This business is a sort of a small miracle in Bratislava, a handcrafted butcher shop with its own grill, which can usually be found in much larger and much more western cities. The local burger is expected to be extremely meaty and mature, smelling of prehistoric times and slaughterhouses and, on a minimum number of ingredients, also huge (justified) self-confidence and attitude.
Unlike the remaining burgers on the list, Roman does not use the Háj bakery brioche, but uses the Šiškáreň bakery as a supplier. The local pickle is otherworldly, you simply won't find a better one in Bratislava.
3. Quinsboro
No other company has attacked the hearts of Bratislava burger lovers as violently and disarmingly as Quinsboro. There is a large number of people who'll be upset by the third place, because they consider the smashed burger from Obchodná Street to be the best in town.
Its strong point is that it is created on a precise and very expensive machine, so every burger tastes the same (great). Another strength is that it is so thoughtfully and uniquely constructed that it's the only one at the top that, thanks to the sauces, is immediately recognizeable even with eyes closed. Again, the intergalactic fries and the overall experience of this place are necessary to be mentioned real quick.
2. Baroza
My biggest surprise of this ranking. It's not that I didn't expect top Chefs to be able to make top burgers. But I felt that from a certain level one has to be a very focused burgerologist to be able to craft something close to a miracle, in order to attack the very top of the list.
The truth is that the very first burger made by Chef Peter Slačka at the beginning of covid in Baroza was not yet completely the finished prototype. And then he got inspired. He divided the meat in the burger into two ultra-thin pancakes, which have no problem with being medium fu*king rare inside ... And the rest is history. This is a burger that you're probably the least familiar with and you need to make sure to change that asap.
1. Roxor
What else is new. After the onset of these new and ambitious places, many people wrote off Roxor, and it is true that with the regularly changing menu, they had a brief period when I, too, thought that it was a little unnecessary.
Then I went there after a long time and then again and again, to be sure. I focused intently on whether I really felt good and my judgment was not obscured by nostalgia and long-term merit... And finally I gave up and had to admit that the legend from Račianske Mýto has still got it - this uncompromising momentum with which they still do their own thang and create burgers, which instantly roll your eyes into whites with the first bite and launch you into a coma for good with the last. I'm looking forward to the day that Roxor will be dethroned for once (and to the burger), but I've gotta say that this day ain't here just yet.
